The burrata is a cheese that is produced in the Italian region of Puglia and that began to be manufactured between the 20s and 50s of the last century to take advantage of the remains of the manufacture of mozzarella. The word burrata derives from the Italian word for “donkey” which means butter. The fact that the name derives from the butter is because a cream is made with mozzarella and butter and is introduced in turn into a sack of mozzarella.
